O.k. so here it is. This is the closest recipe to Chipotle's Medium Salsa that I have found.
Chipotle’s Medium Salsa
2 medium tomatoes, quartered
6 medium tomatillos (use 12 if they are very tiny) (look like small green tomatoes)
1 small-medium red onion quartered
2 garlic cloves, pressed or minced
2 jalapeno peppers (seeded, roasted (or broiled)
2 limes, juice of
1/4-1/2 cup fresh cilantro leaves
2 tablespoons ground cumin
1 pinch red pepper flakes (add more if more heat is desired)
1/2 teaspoon ground coriander
1 teaspoon Tabasco chipotle pepper sauce (more for a hotter salsa)
sea salt (to personal taste)
fresh ground black pepper (to personal taste)
Combine the above ingredients into a food processor. I use the Ninja Master Prep Professional. Pulse until desired consistency is reached. Pulse less for chunky salsa, more for smoother consistency. This makes a lot of salsa so you may want to reduce the recipe. I’ve heard mixed reviews on freezing the leftovers.
